Savory Snack: Spicy sweet potato fries & guacamole

I’ve been eating sweet potatoes a lot– as in almost every single day– for the past month or so, which has led to quite a few sweet potato creations. I’ve done the basic baked sweet potato, roasted sweet potato coins, sauteed sweet potato, sweet potato in soup, etc. However, the one stand-out is definitely my baked sweet potato fries. I had them with a side of homemade guacamole the other day and it was absolutely incredible. This snack has got a little bit of tang, sweetness, and creaminess all in one. Plus it’s good for you! Personally, I love spicy food so I’m pretty liberal with the red chili flakes, but feel free to adjust the spice amounts and/or add other spices if you wish.

Spicy sweet potato fries

Yield: serves 1

1 sweet potatoes

1 teaspoon olive oil

1/4 tsp red chili flakes

1/4 tsp cracked pepper

1/4 tsp dried basil

Directions: Preheat the oven to 375 degrees. Cut the sweet potato in half lengthwise, then divide each half into 4 strips. Lay the strips on a baking pan (I usually line it with aluminum foil), and drizzle the olive oil over. Next add the spices and use your hands to spread it all around evenly. Place the strips side by side, and put them in the oven for 10 minutes. After 10 minutes, take the pan out, flip the strips over, and continue baking for 10 minutes. They should be crispy on the outside and soft on the inside when finished.

Yield: serves 1

1/2 ripe avocado

1/4 cup diced red onion

4 cherry tomatoes, diced

1/8 of jalapeno pepper, diced

1/4 lemon

1/4 tsp olive oil

1/4 tsp cracked pepper

1/4 tsp oregano

Directions: In a small bowl, mash the avocado with a fork. Mix in the red onion, tomato, jalapeno. Squeeze the lemon and stir the juice into the mix. Add in the olive oil, pepper and oregano. Season to taste.
